Strawberry marshmallow mousse

2 x 250g punnets strawberries, finely chopped, plus extra to serve
1/3 cupwater
1/4 cupcaster sugar
1 medium lemon, juice and zest
1 tspvanilla bean paste
2 cupsmarshmallows
300 mlthickened cream, whipped to firm peaks, plus extra to serve

Strawberry marshmallow mousse

1. In a medium saucepan combine strawberries, water, sugar, lemon juice and zest and vanilla on medium. Cook 5 minutes until strawberries are soft. Remove from heat, cool slightly.
2. Puree strawberry mixture until smooth. Strain through a sieve. Divide 1/2 cup puree between six 200ml capacity serving glasses. Chill.
3. Pour remaining puree into a clean saucepan on low, add marshmallows and stir until smooth and dissolved. Transfer to a large bowl and cool slightly.
4. Fold cream through cooled marshmallow mixture. Divide mousse between glasses. Chill 5 hours or until firm.
5. Serve glasses topped with extra whipped cream and finely chopped strawberries.
